Baby corn is young corn that is harvested before fertilization, which yields a mini, tender version of the mature cob.
It derives from ordinary corn that has been picked before the male silks of the corn have pollinated the female ear and created the kernels during its early growth phases. It has a soft texture and a moderate, neutral flavor akin to hearts of palm.
If harvested before the plant fertilizes itself, any variety of corn can produce baby corn.
