Gourd – Snake

Snake gourd, also known as long gourd, is a vine-grown vegetable that looks like a hybrid between cucumbers, bottle gourds, and green snakes and can grow to be several feet long. Potassium, Vitamin A, Vitamin B, Sodium, Calcium, Vitamin C, and Vitamin E are among the vitamins and minerals found in snake gourd. Snake guard is prepared by scraping off the whitish-greenish skin. Some cooks cut the vegetable in half and remove the white seeds. Long gourd is typically prepared in a mild curry with coconut milk and few spices. Young plants with a lighter green color and a crispier texture can be finely sliced and served fresh as a mellum with scraped coconut, green chilies, and onions.
